Would you recommend Probuilder for more organic level design and prototyping (not buildings, rooms - more like a forest platforming level)? I tried to recreate Spiral Mountain from Banjo-Kazooie but it was a struggle and I ran into some glitches. Is there an alternative you could recommend?

Or in something else? It all depends upon how much detail you're aiming for at this stage. My personal opinion, based upon very little experience working with it, is that it's not best for building something that's relatively detailed. You may want to look into Unreal Engine. Yes, I did give it a try with Probuilder. It was a pain and I was thinking of moving into Blender for the level building, but didn't want to have to switch back and forth for edits and scale, and it isn't really good for prototyping.
I actually just picked up UE4 for Blueprints. I know how to code but I have trouble figuring out how to put it all together - I figure visual scripting will be a good starting point and get me on the path to traditional scripting - and didn't want to pay for the comparable Unity asset. I'm liking UE4 better so far. It's great to hear that UE4 also offers some better design/layout/prototyping tools. I haven't gotten there as I'm focusing on Blueprints right now, but it makes me excited!

I’m kind of at a similar state of unfamiliarity with what different tools work best in different scenarios. I’ve used Blender a little bit for prototyping levels, and I definitely prefer probuilder over it for that. UE4 seems to me to be the most versatile and powerful.

Hello! I must say, probuilder is really good (to me) for whiteboxing work but I'm finding it difficult to use for complex level building. As Chunk says, UE4 is better (but less accessible to newbies).
